"As I ate the oysters with their strong taste of sea and their faint metallic taste that the cold white wine washed away, leaving only the sea taste and the succulent texture, and as I drank their cold liquid from each shell and washed it down with the crisp taste of wine, I lost the empty feeling and began to be happy and to make plans." - Ernest Hemingway

Blue Island Oyster Bar, in Denver’s upscale Cherry Creek neighborhood, is a playful nod to a New England Oyster shack. The open kitchen design and central shucking counter highlights the growing interest in experiential dining where customers can see and more fully appreciate the preparation of their food.

Blue leather booths, weathered wood floors and wall paneling provide a coastal patina. An enlarged NOAA map of the Great South Bay of Long Island indicates oyster origins, and CNC-cut oar-like elements suspended over the bar add texture and levity to the experience. The handcrafted nature of the space reflects Arch11’s dedication to articulating idea and form.
